Enologist: Javier Martínez de
Salinas
D.O.C. Rioja
Grapes: Viura (90%) and Malvasia,
White garnacha 10%
Ageing: The must was fermented
in new casks at a temperature of
between twelve and sixteen degrees
centigrade.
Subsequently, and after
racking, it was kept on the finest
of the lees for more than two months
with occasional "bâtonnages" or
stirring of the lees. This process
achieves a perfect ageing,
increasing the sensation of volume
in the mouth and the stability of
the white wine.
TASTING NOTES
The sensation in the mouth is
very well-balanced, silky smooth
and with great finesse. The
finish, with a touch of acicdity,
brings back the whole range of
aromas, together with hints of
smokiness and spices.
Due to the way it has been made
and its analytical
characteristics, this wine can
be expected to evolve steadily
for two or three years, giving
greater roundness on the palate
and terriary aromas of maturity.
