green pear and tropical fruit fragrances accented by
tangerine and orange peel aromas that emerge with
air. Crisp citrus and mineral attack leads to a

Information
Abadía da Cova is the property of the Moure family,
heirs to an age-old winegrowing tradition. In 1958
the family founded Adegas Moure and began producing
wines from their own estate. The current winery was
built in 1982 and the family farms almost 9 hectares
of vineyards in the Riberas do Miño subzone on the
eastern slopes of the Miño.

Vendimmia in the Ribeira Sacra.
Ribeira Sacra is one of Spain’s youngest D.O. and
its wines are sought after for their originality and
character. Located on the steep slopes of the
valleys and canyons of the rivers Miño and Sil, the
region’s isolation made sure the wines remained
relatively obsure until recently. The terrain is
treacherous and raising grapevines requires a heroic
effort, everything must be done by hand.
The
Moure’s vineyards, which are hundreds of years old,
are planted in bancadas (terraces) which cling to
the steep slopes rising above the meanderings Miño
River. The remote area is known as "O Cabo do Mundo"
(The End of the World). The soils are highly acidic,
alluvial over a slate-based subsoil and the climate
in the Riberas do Miño subzone is influenced by the
Atlantic ocean.
The
grapes undergo a pre-fermentation maceration for 12
hours at 7ºC. Fermentation takes place for 12 days
in stainless steel tanks, between 16 and 20ºC and
the wine goes through partial malolactic
fermentation to preserve a good level of acidity. |
